Manual harvest – August 2022 & Bottled May 2023. Natural fermentation in stainless steel, followed by 3 months with skins, lees & manual stirring – creating texture, depth, complexity & flavour. Hand pressed, the wine then rested in ceramic for 5 months & was bottled in May 2022, with no clarification or but filtered. Labelled by hand & topped off with a wax seal to provide an air-tight seal.
